I use an infrared thermometer to instantly test the oil temp: Makes a great christmas gift and helped me learn to fry food. You can get your grease (I swear veggie oil tastes the best) up to 375-385 and drop the fish in and watch it go down to 320ish. THen you crank the fire up on high and get it back to 360 as rapidly as possible and level it off. Using this method I get the most crispy fish I've ever had. One other thing I'll point out is the chef at the Capitol Hotel grinds rice in a blender and adds some to their catfish batter and really gets an awesome crispy fish.

I got a propane stand and pot combo at Walmart but don't make the mistake I made and buy a stand with a timer on it. About time I finished some hush puppies and dropped in fries I left to get my fish and the max 15 minute timer turned the propane off to my pot and I returned to find fries in cool oil with no flame...lame !
Storing oil in a frig. will make it last longer. If you can freeze it, it will last forever. Used oil, reused oil can go bad faster if not stored cool.

My cooker will hold 9 gallons. 1 jug of Clear fry and the rest Rice oil. When I have to add oil, it's rice oil.
I can eat peanuts, peanut butter and anything made with either. Foods fried in peanut oil can make me sick. Catfish is the worst, my wife can't eat it. If the oil has been used for a lot of catfish, she can get sick eating anything fried in it. I think it's the combo of the oil and the catfish oil. I know a few other people that are the same way. I don't keep catfish unless I know that someone wants them.
Look at your local propane dealer. Most of them carry some pretty good stuff. May pay a little more than you would at Bass Pro or Academy but it's usually quality stuff. Also, hardware stores carry cast iron and many with the wire fish basket that goes with it. Just have to look around. I bought a small, deep cast iron pot with a wire basket at Winston Propane in Sheridan couple of years ago. Good thing about it is I can cook enough fish for the wife and me in about a quart or quart and a half of oil, instead of having to use a whole gallon. Hope you find what you are looking for. I agree with the guys that say Cajun Fryer is the best, but you're talking about breaking the bank there!!!
