I am always trying to come up with a better corn meal recipe. I make small adjustments when I fry fish. I use 2/3 corn meal, 1/3 flour and season meal with Tony Chacheres. I go by the color now more than the salt content. Just interested in what everybody else uses.

I have quite the concoction that I mix up which includes, white corn meal, salt, pepper, paprika, cayenne & garlic powder. Worked on it for a while adding and subtracting ingredients and amounts til I got it the way I wanted.
I quit making my own and buy prepared meal.

I mix 5 pounds of yellow corn meal, 1 1/3 cup flour, 1/2 cup salt and pepper to taste. I then freeze in 2 large Zip-Lock bags, place in freezer, and take out what I need each time I fry fish.
