Need good Mercury Boat Mech in North central Arkansas?

Having motor issues 1993 200 merc EFI.Starts good but as I take off it is kind of ruff when you give it gas then once on plane it runs fine good RPM's and good speed.When I stop to fish and then when I try to start up again have to put in in fast idle to start after starting and getting it up on plane run fine good RPM's good speed.Whats my problem have changed spark(NGK's) pluggs seemed to help.Back to the same problem and just started has been running fine.Usually run the motor at least 2 times or more each week.
