Sauger are a memeber of the Perch family of fishes, Walleye, Sauger, and Jumbo Yellow Perch are at the top of the list in fine Table fare. One fish that gets overlooked also and caught regularly in Arkansas is the Chain Pickrel a Pike looking fish that is great eating and worth the trouble of filleting around the Y bones or picking through the bones to eat. Very yummy fish. But In my book of course crappie are the ones for over all taste and catchability in this area to bring the meat home. If I lived in MN thoI think I would be more of a Walleye fisherman. But to anwser your question if you layed a purfectly fried Walleye or Jumbo Yellow Perch Fillet Vs a Crappie Fillet in front of me and said Russ you can only eat one. Im eating the walleye/sauger or Jumbo perch over the crappie every time. These are the only fish that I pick over the crappie as far as eating tho.

In order, my first pick is walleye/sauger then next is 12-15 inch Kentucky bass out of Ouachita, third is crappie.

It'd be a hard choice for me,,I like the fryers in crappie,,10" and smaller,,, them little crispys...and love the smaller walleyes, but heck,,I always catch then dang BIG ONES, so its a cghoice bvetween sauger and crappie for me...either works equally well for me..and the yellow perch ain't bad,,,but not as good as either of my picks...lol
