3 eggs in a bowl, add 1 cup buttermilk, 1 tab spoon salt, 1 tab spoon black pepper, rinse fish fillets and squeeze the water out, drop them in the batter, then remove and roll and coat with, hungry jack potato flakes, then drop in hot oil and fry until golden brown, you will love it.
