    Default *New* Alfredo Baked SLAB Crappie Fillets


    I'm About to POP! This came out Fantastic! This is getting posted ASAP so it's written down.

    We are starting out with Slab sized fillets. This is a commercial cookie sheet. Full sized fillets from the last fish I posted. Big Blacks. Always harder to cook, too thick to fry well, Ketchn's Potato Chip Baking method has been my go to, I was looking for an alternative. We bake Lemon Fish or Cobia Steaks in a Alfredo almost submerged in the sauce. Taking that thought and having a jar of Bertolli Mushroom Alfredo that I bought for use as a seafood pizza sauce I worked this recipe up a little while ago. Turns out the Mushroom Alfredo wasn't very good the first time I made a seafood pizza with it this jar has sat in our pantry for quite a while. As I posted earlier we are eating out of the freezer or pantry to turn over Hurricane reserve foods.

    First I used the piece of unsalted butter to butter the entire bottom of the cookie sheet. The remaining I cut up in small cubes.

    Placing the cubes of butter around the fillets first I seasoned all the fish with Tony's.

    After I spooned the Mushroom Alfredo (Sorry SD) over the fillets and gave a lite shake of dried Parsley & Basil.

    Now using my hand to evenly scatter Panko bread crumbs all over the fish first then I scattered some in the sauce too.

    Giving the pan a little shake to spread the sauce around the pan before placing in a 325 degree oven. The pan was in the middle of the oven.

    Since I had this Italian Shredded cheese I added some to the fish once baked (about 40 minutes).

    First turning the oven off I placed the fish back in for about 5-7 minutes to melt the cheese. I served this over Angel Hair Pasta and it is fantastic.

    My first plate, my Bride ate 2 fillets and 2 passes thru by myself wrecked the other 6.

    On Seafood Pizza is terrible choice when the Creamy Basil Alfredo sauce is so fantastic with Seafood. the Mushroom Alfredo reduced in the oven concentrating the flavor for a flavor explosion. I have had time to think about this, if cooked at a higher temp = faster I do not think the Alfredo sauce would reduce and concentrate the flavor like it did. I stumbled on something here with the Alfredo Reduction.

    No crappie in the freezer, (need to hit the water soon), but have some flounder fillets. Gonna try this tonight...

    Even though we used flounder instead of crappie, This is one recipe Momma Joyce and I agree we will be making again. It is delicious. Thank you John for sharing it.

    I don't know why I didn't do it sooner myself. We did it with larger Saltwater fish steaks, I just didn't think about it.
