    FF,
    Next time you get brave enough to try again, wash them well and then brush them with olive oil. Place them in a pan, cover tightly with and pop them in the oven at 375 for an hour. After a hour test them by sticking a knife in them. If the knife goes through easily, they’re done. If there is some resistance put back in oven for 20 minutes. That should do it. When done put a pot or bowl in the sink and put the beets in it. Fill with cold water and let the water continue to run. Pick up each beet and while holding it under the running water rub off the outer skin. Put in plate and slice into 1/4” slices. Salt lightly and feast.

    I'll try that Gene. Turnips are fantastic cooked that way too. I take them out of the oven when they start to get a little brown on the sides.

    Man that looks great, I prefer pickled beets, but will eat them any way. As long as they are home grown.

    Redge I love them pickled also. We canned a couple of dozen jars a few months back.
