Wonderful examples of what to do with your citrus, we do much the same with lemons but never tried it with satsumas. Mostly cause we have 1 tree and up till now we have managed to eat them all and give the rest away. This is the first year where we haven't quite kept up with them and there are still several hanging and they are beginning to fall. Our recipe is 4 cups juice, 7 cups sugar and 1 box of jell so its simpler. Also we have done away with the need of the hot water bath and streamlined the whole process. It's too much to type again so here is the link to the lemon jelly and lemon pepper jelly post I made I see no reason why it wouldn't work for any citrus, for that matter berry as well. We use this canning technique for every thing have canned hundreds of jars and only 1 failed and that was cause we had 2 lids on it.

To answer the freeze da juice question it freezes well. We freeze some in gallon water jugs for jelly making at a later day, and some in small water bottles to use as juice around the house. We use lots of it and always have a gallon in the fridge thawed out that we cook with drink bake with everything.
